Grilled Lemon Herb Chicken Breast with Mango Salsa
Material:
For chicken:
- 4 boneless, skinless chicken breasts
- 2 lemon juices
- 3 tbsp olive oil
- 3 garlic cloves (chopped)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- salt and pepper to taste
For mango salsa:
- 1 ripe mango (peeled and diced)
- 1/2 red bell pepper (diced)
- 1/4 red onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 tablespoons freshly chopped coriander
- 1 tablespoon lime juice
- Salty to your liking
procedure:
1. Mix lemon juice, olive oil, minced garlic, dried thyme, dried rosemary, salt and pepper in a bowl. Mix well.
2. Put the chicken breast in a sealable plastic bag and pour the marinade. Seal the mouth of the bag and rub the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes and up to 4 hours.
3. Remove chicken from marinade and discard excess marinade.
4. Grill chicken breasts for about 6-8 minutes per side or until cooked through and reaching an internal temperature of 165°F (74°C). Remove from grill and let rest for a few minutes.
5. While the chicken is resting, prepare the mango salsa. In a bowl, mix the diced mango, red bell pepper, red onion, jalapeno pepper, coriander, lime juice, and salt.
6. Slice grilled chicken breast and serve generously with mango salsa. Serve as a complete meal with a side salad or grilled vegetables.
